3 healthy and delicious BOOKPLATE breakfasts

Now that the weather is finally warming up, we've got one thing on our mind: brunch. At BOOKPLATE, our breakfast dishes are designed with both health and taste in mind.

 

Here are our top picks for a top-notch start to the day (especially delightful enjoyed on the terrace in the sunshine!)

 

1. Bircher Muesli

A veritable rainbow of wholesome breakfast goodness. Made with oats and almond milk, this dish packs a protein and fibre punch and will have you feeling satisfied for longer. Dried fruits including figs, apricots and cranberries add a touch of natural sweetness, while berries, shredded green apple and a drizzle of yoghurt complete the pretty picture.

 

2. Organic Breakfast

This one is definitely a touch different from your standard big breakfast deal. Poached eggs done just right lay atop a bed of paprika-spiced chickpeas (protein + fibre + folate – tick!) and native flatbread. Then comes a flavour explosion with tomato, za'atar (Middle Eastern herbs), eggplant, feta and fried basil.

 

3. Green Brekky Bowl

So much goodness in one bowl! This one's a great way to kickstart your daily dose of greens, with delicious tender broccolini, kale and green peas. Roasted pumpkin offers a splash of colour as well as a dose of posassium (important for heart health), while labneh (a type of cheese) adds a creamy texture and a sharpness to counter the sweetness of the pumpkin. The dish is finished with a dusting of traditional Egyptian dukkah (toasted seeds and nuts). Scrumptious!
